7th on the list of summer wines-
using the lees from Grog, I will start;
Kahlua wine. 8/1/10
- lees from Grog- including cinnamon sticks
- 1 ripe banana
- 1 apple
- 1 orange -squeezed
- 2 vanilla beans
- 2# brown sugar
- 2# white sugar
- coffee- 1 gallon
- water to top to 2 gallons
- 1 tsp. pectic enzymes
SG- 1.07
8/25/10- Sg. -.999
12/6/10 – I went looking in my cellar for this wine, I had not seen it in a while, It was pushed to the rear.
It is clear, a maple syrup color, slightly sweet and needs some acid correction.
I will be racking it soon adding campden and seeing if I can get to lower the acid a bit.
so far- the coffee/vanilla flavors are spot on. If I can get the acid balanced- I may add a touch of glycerin to give it some more body.

This a truly great post and may be one that should be followed up to see how things go
