Cranberry wine 09 Nov. 28 2009
10 pounds fresh cranberries
5 pounds pumice from red wine
water to five gallon marker
sugar 8 pounds +-
1/2 banana
1 orange cut in 8
2 cinnamon sticks,
3 cloves
3 allspice
3 star anise
1 pinch red chili flakes
1 tbl. pectic enzymes
prise de mousse (ec118) yeast
stats:
Sg 1.082
aprox ABV 11%
ph 3.8
method:
I pulsated cranberries in blender with water and added the pumice I saved from my red wine.
then I added sugar and water to top, tested SG. and then added the spices and yeast.
racked and fermenting away
2/24/10- still fermenting .
7/2710-
racked from 4 gallons to three.
added campden, potassium carbonate and 2 oz. wine finisher
topped up with white zinfandel
racked and topped with merlot-
bottled on 11/20/10
