Chile Lime Wine

started on 1/18/11

  • 9 home grown, vine ripened jalapeno peppers
  • 1/2 a banana
  • 1 cup black tea
  • 1 qt. lime juice
  • 1 gallon apple juice
  • 4# sugar
  • water to 2 gallon mark (1 qt.+-)
  • 1 tsp yeast food
  • 1 tsp. yeast nutrient
  • 1 tsp. pectic enzymes
  • yeast EC 118

SG. 1.09

One hour later:

1/31- racked to secondary fermentation-

SG at 1.000- topped with apple juice- fermentation is active.

Racked and topped up
