Pineapple jalapeno mead

Started  6/2/08

2 cans white grape juice
8 cans water
5 roasted red jalapenos
Honey to sg. 1.06
Sugar to 1.082 (23 brix) 11% PA
2 very ripe bananas
2 pineapples
Handful of white raisins
Squeeze of lime juice
Pectic enzymes
Yeast nutrient
Yeast energizer
Acid blend
Wine tannin
Epernay  (prise de mousse) yeast

Looking for a dry wine less honey flavor, light alcohol – spicey tones
