Mojo 2012

Mojo 2012- is my third time making this recipe. I will be using Agave nectar to give it a Margarita style flavor.


  • Lees from Chardonnay
  • 2 bunches mint
  • 1 apple
  • 1 banana
  • 30 oz. lemon juice
  • 60 oz. lime juice
  • water to 5 gallon mark
  • 72 oz. agave nectar
  • 4# sugar
  • 1 cup tea
  • Yeast nutrient- 1.oz.
  • Yeast energizer- 1oz.
  • pectic enzymes- 1 oz.

starting SG- 1.070

3/3/12 racked to secondary, topped with margarita mix, sorbate and campden added as well as sodium bicarbonate to lower acid.

  1. That sounds absolutely delicious. I would love to give it a try some time and see just what agave nectar is all about.
