  1. peeled frozen prickly pears- 10# Boiled to make a syrup
  2.  1 dried red chile pepper
  3. 10# red wine pumice
  4. lime juice
  5. pectic enzyme
  6. opti-red yeast nutrients
  7. water to 5 gallons
  8. agave nectar- 88 oz.
  9. sugar to get Sg.- 1.062
  10. Acid blend to get TA. .55
  11. EC 118 yeast
