Strawberry Wine

strawberry wine recipe            6/22/09

5 # strawberries
1# white raisens
1/4 banana
water to 2 gallon
4 # sugar
1/4 cup lemon juice
tea made with two tea bags

ph. 4.4
sg. 1.075
1 tsp.pectanase
yeast -epernay II

heated raisins and tea bags,
then heated sugar and water- put together removed tea bags after 5 minutes.
heated strawberries and water till boil and then added to raisin/tea water.

let cool- added pectanase and yeast.

I racked the wine into gallon jugs and put it on the shelf to finish fermentation,

sometime in the week- the airlock was blown off and almost 1/2 the strawberry wine was gone-the air lock had got plugged and pressure built up- I found the air lock across the garage- and the wine was pretty much had sprayed all over and dripped down to floor.

more recently, I had decided to “pepper” one of the wines.
